# TRC Coffee Program — Equipment & Service SOP

## 1. Pour-over station

**Core argument:** concierge staff are not baristas. Manual V60 by an untrained hand is inconsistent. Buy an automatic SCA-certified brewer as the workhorse and keep manual V60 as the theater piece for members who want to watch.

Skip Baratza Encore ESP (~$195): fine for one home user, too slow and coarse-inconsistent for 40 drinks/day. Skip xBloom Studio ($599) — pod ecosystem, wrong for a bean program. Skip EK43 unless volume triples.

## 2. Espresso

**Recommendation: keep the existing machine only if it is a real 58mm machine in good repair. Otherwise standardize on a [Breville Oracle Jet](https://www.wholelattelove.com/products/breville-the-oracle-jet) ~$1,999.** Built-in grinder, auto-dose, auto-tamp, auto-steam wand with milk-temp probe. A concierge pulls a repeatable double with zero puck-prep skill. That is the elegant-and-idiot-proof point.

- **Superautos (Jura E8 ~$2,500, Miele CM7, De'Longhi Rivelia):** reject. They make brown liquid, not espresso, and oat milk texture through an auto-frother is thin and bubbly. Wrong signal for a studio charging membership.
- **[La Marzocco Linea Micra](https://lamarzoccousa.com/home-products/espresso-machines/linea-micra/) $4,500 + X54:** correct only if you accept 2 hours of real training per staffer. Best cup, most beautiful object, highest failure rate untrained. Tier-2 option.

**Oat milk workflow:** Oatly Barista or Minor Figures. Steam to 130–140°F only — oat scorches and thins above 150°F. Purge wand, submerge tip 1cm, 3 seconds of stretch, then whirlpool. Wipe and purge after every drink. Dedicate one pitcher per milk type (12oz for oat, color-band the handles).

## 3. Water

Water is 98% of the cup and the only variable that silently destroys a $4,500 boiler. Target **75–150 ppm TDS, 40–70 ppm alkalinity, ~7.0 pH**. Santa Monica tap runs hard.

**Do:** BWT plumbed to the espresso machine, Third Wave Water for pour-over. Two systems, correct for each.

## 4. Service SOP

**V60 recipe card (laminated, at the station):**
- Dose 22g · Water 360g · Ratio 1:16 · Grind: Ode setting 6 (medium-fine) · Temp 205°F
- Bloom 60g / 45s → pour to 200g by 1:15 → pour to 360g by 2:00 → drawdown ends 3:00–3:30
- Total 3:30. Over 4:00 = grind coarser. Under 2:45 = grind finer.

**Signature drink card — "The Live Room" (honey-oat cortado):**
- 18g in / 36g out / 25–30s espresso · 1 bar spoon (7g) honey stirred into the hot shot · 4oz oat milk steamed to 135°F · serve in 6.5oz cup, no latte art required.

**30-minute training:**
1. 0–5: grind size, why the timer matters, taste sour vs. bitter side by side.
2. 5–15: three Aiden brews, one per origin, taste all three.
3. 15–25: two espresso shots to the recipe card, two oat steams to 135°F.
4. 25–30: cleaning close-out and the member card.

**Cleaning.** Daily: backflush espresso with water, wipe wand after every drink, rinse pitchers, empty Aiden, wipe grinder chute. Weekly: Cafiza backflush, Urnex Grindz through the grinder, descale check, run kettle vinegar cycle monthly.

**Freshness.** Buy roast-dated. Use from day 7 to day 21 post-roast, never past 28. 5 lb bags into Atmos canisters, one canister per origin, purged after every dose. Freeze the surplus in 250g vacuum bags, thaw sealed for 2 hours before opening.

**Member card.** One line in the member CRM: origin preference, drink, milk, sweetness, cup. "Marcus — Ethiopia, V60, black, Hasami tumbler." A studio assistant who says "your usual?" is worth more than any grinder on this list.
