The station

Concept renders for the kitchen counter. Dark walnut, black ceramics, one red dot. Everything on the counter earns its place; anything else goes in the cabinet.

Design rules

  • Palette: Bone #F5F2ED, Charcoal #2C2C2C, Crimson #db1f41, walnut, matte black. Nothing chrome.
  • Ceramics dark, glass clear, paper cream. No paper cups inside the building.
  • One red dot per object at most (brew card, canister label, cup base).
  • Nothing on the counter that is not used daily. Backup stock lives in the cabinet.
  • Renders are concept art for the counter, not photos of the club.

Take 2 · weekly batch, 2 L

Cold brew: 250 g coarse, 2 L filtered water, 18 h at 40°F, strain
Clarify: 500 mL whole milk in a 4 L container. Mix the 2 L cold brew with 80 mL fresh lemon juice, pour INTO the milk in one motion, do not stir, rest 2 h at 40°F
Strain through a cheesecloth-lined fine sieve, then through a paper filter; pour the first 250 mL back over the curds until it runs clear
Yield about 2.2 L = 18 serves · keep 7 days at 40°F, labeled
Serve: 120 mL over one 2 in clear cube (True Cubes tray), express orange peel over the glass, discard peel

Service standard

The arrival

  • Cup lands within 5 minutes of a member sitting down, unasked, on the tray with the brew card.
  • Concierge checks the member card first, says "your usual?"
  • First visit: ask once, write the card, mirror to the CRM coffee line.

Training · 30 min

  • 0 to 5: taste sour vs bitter side by side, why the timer matters.
  • 5 to 15: three Aiden brews, one per origin, taste all three.
  • 15 to 25: two shots to the card, two oat steams to 135°F.
  • 25 to 30: close-out and the member card.

Clean and fresh

  • Daily: purge wand every drink, water backflush, empty Aiden, wipe chute.
  • Weekly: Cafiza backflush, Grindz through the grinder, Take 2 batch.
  • Beans: use day 7 to 21 post roast, never past 28. One week ambient, rest vacuum sealed 1 lb and frozen. Thaw sealed 2 hr.

Sourcing · what a pound really costs

An 84.75-point green bean is $6.26 a pound raw. After 15% roast loss that is $7.36 before anyone roasts it. Amazon Fresh was $8.17 in Feb 2026. The Amazon price for specialty coffee does not exist; beans alone run about $165 a month more.
